I cannot do cow’s milk or coconut products. Could I use 1/2 goat milk kefir and 1/2 goat milk to replace the half and half? Do you know of any other alternatives that I could use?

FAQs

What is the best flour for making homemade biscuits? ›

White wheat in general is around 9-12% protein, while the hard reds are 11-15%. As far as brands of flour, White Lily “all-purpose” flour has been my go-to for biscuit making. It's a soft red winter wheat, and the low protein and low gluten content keep biscuits from becoming too dense.

How do you make Paula Deen's buttermilk biscuits? ›

In a large bowl, whisk together flour, sugar, and salt. Using a fork or pastry blender, cut in cold butter until mixture is crumbly and about the size of peas. Gradually add buttermilk, stirring just until dry ingredients are moistened. Turn out dough onto a lightly floured surface, and gently knead 3 to 4 times.

Why do my homemade buttermilk biscuits fall apart? ›

I've experienced a more crumbly product which comes from a dough that is too dry, by just a little bit more buttermilk. Also, be sure to adequately blend your butter/shortening with your flour. Don't use bread flour or cake flour- all purpose is just fine.

What flour do Southerners use for biscuits? ›

If you start asking around, any Southern chef, Southern Living Test Kitchen pro, or biscuit-making family member will swear by White Lily flour. Generations of bakers have claimed it as the secret to the perfect, flaky biscuit.

Are homemade biscuits better with butter or shortening? ›

The butter version rises the highest — look at those flaky layers! The shortening biscuit is slightly shorter and a bit drier, too. Butter contains a bit of water, which helps create steam and gives baked goods a boost.

What's the difference between a Southern style biscuit and a buttermilk biscuit? ›

There are many theories about why Southern biscuits are different (ahem, better) than other biscuits—richer buttermilk, more butter, better grandmothers—but the real difference is more fundamental. Southern biscuits are different because of the flour most Southerners use. My grandmother swore by White Lily flour.

Cassava flour can be used for baking cakes, cookies, crackers and bread, or in Alter's case, use it in pancakes, béchamel sauce, or as a soup, broth, or gravy thickener. If you don't have wheat flours or other flours on hand, go ahead and use cassava flour.

How does cassava flour affect baking? ›

It has a neutral flavor and fine texture, though it is a bit lighter than all-purpose wheat flour. It also absorbs a little more liquid and doesn't always bake the same way.

Why aren t my buttermilk biscuits fluffy? ›

A non-fluffy, flat biscuit can be caused by a few things: too much liquid in the dough (resist the urge to add more buttermilk to make the dough come together and use the heat of your hands and a bit more kneading instead). Over-mixing the dough can cause flat biscuits.

What is the secret to making biscuits rise? ›

Place your biscuits close together on the pan. If they're touching, they rise better. If you like flatter biscuits, spread them out on the pan.
