This is all we’ve got to do to have this gooey Chicken Parmesan Casserole on the table.

  1. Cook the pasta. Simple enough.
  2. Add your cooked chicken, sauce and gluten-free breadcrumbs.
  3. Add more sauce.
  4. Top with cheese andddddd BAKE.

Can you handle that? I think we all can handle that.

Now you are more than welcome to not bake in the casserole dish to save time from pan to belly but the baking does something beautiful.

TIP: When using gluten-free pasta, after you cook and drain, RINSE THE PASTA OFF.

Yes, I’m slightly yelling at you about this tip. Because it is important. Gluten-free pasta is delicious but you’ve got to learn how to work with it. Rinsing the pasta off will get rid of the extra starch and prevent the pasta from grouping together into a gloopy mass.

Yep. Gloopy is not a word I’ve ever used here before. But in this context its perfect.

If you’d like to take an extra step, you can use our homemade spaghetti sauce in this dish instead of store bought.

I’ve made this Chicken Parmesan Casserole many ways.

  • Roasted the chicken, homemade marinara sauce.
  • Store bought roasted chicken, homemade marinara sauce
  • The normal lately? Store bought roasted chicken and store bought marinara sauce.

It was a progression into lazier cooking. Is that even possible?? I’m pretty lazy already.

Whatever cook level you may be at in your life at this point, this Chicken Parmesan Pasta Casserole is divine and will earn a place on the weeknight dinner rotation just like it has for so many others.

Chicken Parmesan Casserole Recipe

Chicken Parmesan Pasta Casserole is the easy gluten-free dish your whole family will be talkin’ about. Baked it up and devour!

Ingredients:

  • 2 skinless chicken breasts, cooked, shredded into pieces. (apprx 2 cups)
  • 2 1/2 cups marinara sauce (or try our homemade spaghetti sauce recipe)
  • 4 cupsfavorite gluten-freepasta, cooked
  • 1 cup frozen spinach, thawed
  • 1 cup Parmesan cheese, shredded (or dairy-free alternative)
  • 1/3 cup cornmeal / gluten-free breadcrumbs
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil

Directions:

  • 1. Preheat oven to 350° F.
  • 2. In a large bowl combine sliced chicken, cooked pasta, spinach, marinara sauce and 2/3 cup parmesan cheese.
  • 3. Mix until combined.
  • 4. Spread the pasta in a 8x8 casserole dish.
  • 5. Spread breadcrumbs over pasta. Sprinkle remaining cheese on top.
  • 6. Cover casserole dish with foil. Bake for 30 minutes. Remove foil and bake uncovered for another 10 minutes for cheese to brown and casserole is bubbly.

      Hi Stacey! It is skinnier than the traditional Chicken Parmesan Casseroles I’ve seen. It also does have minimal cheese as well vs. traditional dishes. The nutrition information is below the recipe. I have made it with my homemade marinara sauce and also with store bought. Sometimes I add mushrooms to the sauce and it adds an additional kick to this dish I love, sometimes I don’t. It is a very versatile dish. 🙂

          I use one or the other. The gluten-free breadcrumbs I’ve purchased in the past were actually cornmeal lol so I just use cornmeal more often for that reason when breading things. Hope this helps! 🙂

      Mmm… If you cut them extremely small (like almost shaved) yes I think it would work. TO be safe I’d quickly microwave or steam them because nothing worse than crunchy carrots in a casserole. 😉
